Introducing Aquiares Estate, our newest House Espresso served at our Bridge Street and Northgate Street shops. Roasted locally by us, profiled primarily for use as a black coffee or with a dash of milk.
We are incredibly excited to be working with Aquiares for this coffee which not only tastes excellent in the cup, but is a standout farm for its contributions to sustainability research, which will help make the future of farming coffee more ecological.
The Aquiares estate is one of Costa Rica’s largest and most historic coffee farms, founded in 1890, and now with a thriving local community of 1,800 people over 924 hectares.
Aquiares is strongly committed to, and has become an international leader in environmental sustainability, and became the first farm in Costa Rica to fulfil the requirements of the Rainforest Alliance Climate Module. This requires adhering careful standards of greenhouse gas emissions and energy use, which are carefully tracked each harvest season, certifying that their low emissions do not meaningfully contribute to climate change.
Additionally, Aquiares is the basis of an ongoing study between the CIRAD Institute of France and the CATIE University of Costa Rica – the “Carbon-Flux” project measures greenhouse gas exchange between the farm plot and the atmosphere. This research station is the only one of its kind in the world, capable of accurately measuring the emission-sequestration balance of a hectare of shaded coffee. With this tool, the researchers are developing a model that can be used by any coffee farmer in the world to estimate the carbon sequestration potential of their farm.
We are finding taste notes of chocolate and caramel, with a lively characteristic and body when served as an Espresso, Long Black or Americano.
